Shrimp Tacos. Why we love it: Taco Tuesday made easy!
Ingredients
- 1 1/2 tbsp avocado oil
- 1 1/2 tsp chili powder
- 1/2 tsp salt
- 1 pinch cayenne pepper
- 1 1/2 lbs shrimp extra large, peeled and de-veined
- 8 whole tortillas gluten free or brown rice
Instructions
- Heat grill to medium, you can also make these on a George Foreman grill or in a hot skillet.
- Mix the avocado oil, chili powder, salt, cayenne pepper and shrimp in a large bowl. Stir until shrimp are evenly coated with seasoning.
- Grease grill with butter, you can use avocado oil but butter tastes better. Place shrimp on grill and cook until just opaque, about 1-1/2 – 2 minutes per side.
- Toppings: Add avocado and salsa to add more nutritional value to your tacos. These toppings will kick up the flavor as well.
Notes
Hint: If you don’t have gluten free or brown rice tortillas you can always make it a play on a “Chipotle Burrito Bowl” with rice and beans.
